Menu Plan Monday

I am telling you, spring sports season always kills us on meal plans. Especially because we have had so much rain, the kids games and practices have been rescheduled so many times and at the last minute that we are all over the place at dinner time. I think we have had sandwiches more this spring than the entire rest of the year combined!

Friday I made a HUGE batch of homemade granola and threw in everything but the kitchen sink as far as freeze dried fruits and nuts. I have been eating that almost 2-3 times a day since. It is so easy to make and so good! You can see the recipe HERE. I more than tripled it.

Monday Dinner:
Pork Chops, salad and fruit.

Tuesday Dinner: (girls have games… boys have scouts)
Something quick, I am thinking Harvest soup with Rhodes rolls.

Wednesday: (again, baseball and softball)
Taco TVP’s (husband’s speciality) and fruit.

Thursday Dinner: (son headed out for scout camping, girls games)
Pizza, I am switching, we usually have it on Friday’s but it’s my sons favorite and he won’t be here Friday! Also, I am craving fruit like a mad woman so I am sure we will have a fruit salad also!

Friday Dinner: 
I am going to see what you guys are having and go from there!

Menu Plan Monday

I have completely failed at my menu plans for 2 weeks! As a result, we have eaten out more times than we should have. Honestly, it makes a huge difference if I plan what we will be having. First, I take a look at what we have in the fridge that has to be eaten up, then I move to the freezer and finally to the pantry for what just plain sounds good. I also take into account what is on sale at the store that I know I will have a chance to pick up. I don’t plan for lunches or breakfast anymore. I pack all the kids lunch and breakfast lately is cold cereal or bagels with cream cheese. Easy.

Monday:
Hamburgers, chips and fruit salad.

Tuesday: 
Frozen lasagna, French Bread and Salad (thanks to frozen food month this month I have a few of these!)

Wednesday:
Chili, Salad and French Bread, seen HERE

Thursday:
Slider Sandwiches, we have games all night so I have to be able to take them with us! Chips and fruit also. 

Friday:
Pizza, I think this week we will try a taco pizza for Paul and I and pepperoni for the kids.

Menu Plan Monday

This time of year has snuck up on me once again! I know for all you further north and those under 2 feet of snow don’t start your spring sports for a few more months. Here in the “south” we have already had our drafts and start baseball/softball practices this week. This means for me, my life changes for the next 4 1/2 months. With 3 kids playing baseball/softball, one in soccer and another in ballet, I have no life
Dinner really suffers! I have to be realistic! Many meals are “lunches” that I pack and we eat at whatever park for practice we happen to be at. I try my hardest to avoid fast food for the price and just how unhealthy it is.
But, to be honest I love this time of year. I love being outside every night and coming home wore out from the fresh air, I love my kids getting filthy dirty in the sand and clay of the fields, and I love the “lighter” dinners that we eat.

Monday:
Dinner ~ Leftovers from the superbowl! We have sandwiches, guacamole, crackers and cheese, etc.

Tuesday:
Dinner ~ Grilled Chicken with Salad, no recipe, just as easy as it sounds.

Wednesday:
Dinner ~ I can’t believe I am going to admit this! Hamburger Helper… does anyone else’s kids LOVE this as much as mine??

Thursday:
Dinner ~ Harvest Soup. My grandma’s recipe. I will post it on Wednesday.

Friday:
Dinner ~ Pizza.

Menu Plan Monday

Last week’s plan went really well. I found that my husband even looked to see what was on the plan and got dinner started one night. Brilliant! Anything in blue is a link to the recipe.

Monday:
Dinner: Hamburgers found pre-made patties at Kroger for a steal!

Tuesday:
Dinner: Tuesday nights are crazy for us, so I think I am going to have Breakfast for Dinner! Either Banana Pancakes or Cream of Wheat with toast and fruit. Either way the kids will love it!

Wednesday:
Dinner: My cheapest meal ever only $.58 a person! Kroger mega event leftovers! Chili and salad!

Thursday:
Dinner: Pan Fried pork chops and asparagus. I have to use the chops up in the freezer, now I justhave to remember to pull them out!

Friday:
Dinner: Pizza of course! Unless I find a great deal on something I can’t pass up!

I personally find that if I have at least some kind of plan for dinner during the week…
#1 We eat out less
#2 Makes shopping easier
#3 I can recruit more help 🙂

Monday:
Stuff!
Dinner: I have left over large baked potatoes from the baked potatoe bar we had on Saturday so I am going to fry them up with sausage and my kids FAVORITE meal called “stuff”!

Tuesday:
Roast in Crock Pot
Dinner: We have scouts tonight so we have to eat early, my husband has been dying for something in the crock pot so I am going to pull out a frozen roast I have from Kroger’s sale last week. I am going to pull a recipe off allrecipes.com

Wednesday:
Taco Salad
I have a meeting so I will be gone for dinner, this means the husbands and kids favorite, Taco Salad!

Thursday:
Left Over Soup!
I will make soup with the left over roast. I use this Turkey soup recipe and add left over roast. It is actually really good! I am also going to make homemade rolls.

Friday:
Homemade Pizza
This is a staple on either Friday or Saturday night! My husband and I are amazing pizza makers, just ask us:) I can’t believe Ihave never posted our dough recipe…. I will do that this Friday!

Weekend meals will depend on what I find at the grocery store on sale this week 🙂
